Luke Hines’ Gorgeous Green Salad

This really simple but slightly different take on a classic garden salad is the ultimate crowd pleaser. Make just before serving to keep the creamy avo dressing nice and fresh.


  • 1 bunch of flat-leaf parsley, leaves picked
  • 1 bunch of mint, leaves picked
  • 1 bunch of dill, sprigs picked
  • 1 bunch of chervil, sprigs picked
  • 1 loosely packed cup picked watercress sprigs
  • 1 loosely packed cup baby rocket leaves
  • 1 butter lettuce, leaves separated, torn
  • 2 tbs pumpkin seeds, toasted, finely chopped

Avocado Dressing

  • 125 ml (1/2 cup) extra-virgin olive or avocado oil
  • 1 avocado
  • 1 handful of coriander leaves
  • 1 tbs apple cider vinegar
  • 1 tsp chilli powder
  • Finely grated zest and juice of 1 lime
  • Pinch of sea salt


Step 1.
For the avocado dressing, blitz all the ingredients in a food processor until smooth and creamy.

Step 2.
Add all the salad ingredients in a large bowl and toss to combine, then gently toss through the dressing. Serve immediately.
