Zoe Bingley-Pullin’s Chia Seed Fruit Salad

Straight from the tropics to your kitchen, this superfood fruit salad is loaded with the classic combo of lime, mint and coconut.

Ingredients

  • ¼ rockmelon, skin removed, diced
  • ½ punnet strawberries, tops removed, cut in half
  • 1 punnet blueberries
  • ½ pineapple, skin and core removed, diced

Topping

  • ½ cup toasted coconut flakes
  • ¼ tsp turmeric, powder
  • 1 tbs Bioglan Organic Chia Seeds
  • 1 lime, juiced
  • 2 tsp lime zest
  • Fresh mint leaves

Method

Step 1.
In a bowl, combine toasted coconut flakes, turmeric, chia seeds, lime zest and juice and mint.

Step 2.
In a separate bowl, combine rockmelon, pineapple, strawberries and blueberries.

Step 3.
Toss both fruit salads together in a bowl and serve.
