Luke Hines’ Olive Oil Banana Bread

It was the crowning jewel for many a home baker during lockdown, and now the humble banana bread has had a healthy makeover courtesy of Luke Hines.

Ingredients

  • 3 large bananas, mashed
  • 1/2 cup extra virgin olive oil
  • 1/2 cup granulated coconut sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • 2 tsp gluten-free baking powder
  • 1 tsp cinnamon

Method

Step 1.
Preheat oven to 180C and line a small bread tin dish with baking paper.

Step 2.
Whisk together the mashed banana, oil, sugar, eggs and vanilla until smooth. Mix in the oat flour, baking powder and cinnamon until smooth and well combined.

Step 3.
Bake in oven for 40-45 minutes (or until you insert toothpick and it comes out clean). Allow the bread to cool for a few minutes, then slice and enjoy.

Makes 1 loaf
