Low-Fat Oatmeal Biscuits
Serve these crunchy, sweet and satisfying cookies with fresh, crisp apples for a nutritious snack any time of the day.
Ingredients
- 95 g (1/2 cup) steel cut oats
- 95 g (1 cup) rolled oats
- 1/2 tsp salt
- 2 tbs butter, melted
- 75 ml hot water
- Plain flour, for dusting
- Apples, to serve

Method
Step 1.
Preheat the oven to 180°C (160° fan).
Step 2.
Pulse the steel cut oats in a food processor until they take on a coarse flour-like consistency. Add the rolled oats and continue to pulse until they take on the same texture as the steel cut oats.
Step 3.
Tip out into a mixing bowl and stir in the salt and melted butter. Stir in the hot water and then start to knead with your hands, bringing the dough together until it no longer feels sticky, 2-3 minutes.
Step 4.
Form into a ball and turn out onto a floured work surface. Dust the pin with flour before patting down the dough into a disc and rolling out to about 1/2 cm thickness.
Step 5.
Cut out rounds using a round cookie cutter, roughly 8 cm in diameter. Arrange between two baking trays, spaced apart.
Step 6.
Bake until dry and set, about 25-35 minutes, turning after 15 minutes. Remove from the oven and let them cool on their trays before serving with apples.
