- 2 cups oats
- 1 cup almond meal
- 1/3 cup shredded coconut
- ½ cup dates, finely chopped
- ¼ tsp each of cardamom, all spice mix, nutmeg and ground cloves
- ½ tsp each of cinnamon and ground ginger
- 2 tbs coconut oil, melted
Honey Cinnamon Yoghurt
- 2 cups natural greek yoghurt
- 1-2 tbs honey
- Pinch of cinnamon
Preheat oven to 180C. In a bowl, combine oats, almond meal, coconut, dates and spices, mix well. Add melted coconut oil and using your fingertips rub the mixture together until a crumb forms.
Tip the crumble mixture onto a lined baking tray and spread out evenly. Cook for 15 minutes or until lightly golden. Remove from the oven, set side.
Place the apple, honey or maple, collagen and water into a saucepan. Bring to the boil and simmer for 10 minutes or until the apples are tender and water has evaporated. Set aside.
Whisk together the yoghurt, honey and cinnamon, adjust sweetness to suit, set aside.
To serve, place a little yoghurt on the bottom of a glass, then add some of the apple mixture and then the crumble. Repeat the layers until the mixture is used up.
