Luke Hines’ Cacao Breakfast Bites

Who says chocolate can’t be eaten for breakfast? Not us! Not when there’s wickedly healthy brekky bites like these on offer.

Ingredients

  • 5 eggs
  • 4 very ripe bananas
  • 125g nut butter of choice (cashew or macadamia is our pick)
  • 1/3 cup coconut oil
  • 1 tsp vanilla extract
  • 1/2 cup coconut flour
  • 1 cup cacao powder
  • 1 tbs chia seeds
  • 2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/2 cup grated carrot
  • 1/2 cup grated zucchini
  • 1/2 cup grated pumpkin
  • Pinch of salt

Method

Step 1.
Start by preheating your oven to 180C and either grease or line a 12 hole muffin tray with paper liners.

Step 2.
In a large bowl, combine the eggs, bananas, nut butter, coconut oil and vanilla extract. Mix well to combine, then stir in the coconut flour, cacao powder, chia seeds, cinnamon and baking powder. Use a spoon to mix really well until all incorporated into a thick batter. Finally, stir in the grated vegetables.

Step 3.
Spoon the mixture evenly into the muffin tray, transfer to the oven and bake for 20-25 minutes or until crispy and crunchy on top and cooked through. Remove from the oven and allow them to cool slightly before digging in!
