Quick and Easy Berry Muesli Bars

Make that 3pm snack attack more guilt-free with these satisfying and simple-to-make bars. Substitute the almonds for extra oats or dried fruit and they morph into a kid-friendly lunchbox choice, too!

Ingredients

  • 1 tbs sunflower oil
  • 175g (1 cup) Medjool dates, pitted
  • 100g (1/2 cup) honey
  • 120g (1/2 cup) almond butter
  • 250g (3 cups) rolled oats
  • 100g (3/4 cup) whole almonds, chopped
  • 45g (1/3 cup) dried goji berries
  • 70g (1/2 cup) raisins

Method

Step 1.
Preheat the oven to 180C (350F). Grease and line a 20cm square baking tin with greaseproof paper. Grease the paper with the oil.

Step 2.
Pulse the dates in a food processor until broken up and dough-like in consistency. Scrape into a bowl.

Step 3.
Warm the honey with the almond butter in a saucepan set over a low heat, stirring constantly, until smooth and melted. Pour into the bowl of dates and add the oats, almonds, goji berries, raisins and a pinch of salt. Mix thoroughly with a wooden spoon.

Step 4.
Gently press the mixture into the prepared tin, smoothing the top flat. Bake for about 20 minutes or until golden on top.

Step 5.
Remove the tin and transfer to a wire rack to cool. Once cool, turn out and cut into slices before serving.
