- 1 tbs sunflower oil
- 175g (1 cup) Medjool dates, pitted
- 100g (1/2 cup) honey
- 120g (1/2 cup) almond butter
- 250g (3 cups) rolled oats
- 100g (3/4 cup) whole almonds, chopped
- 45g (1/3 cup) dried goji berries
- 70g (1/2 cup) raisins
Preheat the oven to 180C (350F). Grease and line a 20cm square baking tin with greaseproof paper. Grease the paper with the oil.
Pulse the dates in a food processor until broken up and dough-like in consistency. Scrape into a bowl.
Warm the honey with the almond butter in a saucepan set over a low heat, stirring constantly, until smooth and melted. Pour into the bowl of dates and add the oats, almonds, goji berries, raisins and a pinch of salt. Mix thoroughly with a wooden spoon.
Gently press the mixture into the prepared tin, smoothing the top flat. Bake for about 20 minutes or until golden on top.
Remove the tin and transfer to a wire rack to cool. Once cool, turn out and cut into slices before serving.
