Susie Burrell’s Chilli Tuna with Mixed Vegetables

The perfect throw together meal when you’re pressed for time, this spicy tuna dish is simply delicious and can be loaded with any veggie of choice.

Ingredients

  • 150g frozen mixed vegetables (broccoli, cauliflower, carrot)
  • 95g can tuna in spring water, drained
  • 1/3 cup canned chickpeas, drained
  • 4 tbs tomato & garlic stir through pasta sauce
  • Chilli flakes, to taste

Method

Step 1.
Cook vegetables in microwave for 2-3 minutes.

Step 2.
Add the tuna, chickpeas, pasta sauce and chilli flakes and microwave for a further 1-2 minutes until heated through. Serve with extra chilli if desired.

Serves 1
