Spaghetti and Meatballs

Comfort food doesn’t get more comforting than this classic childhood favourite. Easy to prepare, this midweek dinner delivers big on flavour and fibre.

Ingredients

  • 500g beef mince
  • 1 onion, finely chopped
  • 1 garlic clove, crushed
  • 1/2 bunch basil, finely chopped
  • 1 carrot, washed and grated
  • 1 tbs Bioglan Chia Seeds
  • Pinch salt and pepper
  • 1 jar tomato pasta sauce
  • ½ packet wholemeal spaghetti, cooked according to packet directions

Method

Step 1.
In a large bowl, combine beef, onion, garlic, basil, carrot, chia seeds, salt and pepper and roll into small balls.

Step 2.
Pour the pasta sauce into a shallow lidded saucepan or frying pan, bring to a gentle simmer before adding the meatballs and cooking on low heat for about 30 minutes until meatballs are cooked through.

Step 3.
To serve, place cooked pasta into bowls and top with meatballs and sauce. Finish with a few extra basil leaves and chia seeds.
