Easy Ramen Noodle Soup

The easiest ramen you’ll ever make, bone broth adds an earthy, salty flavour that’s perfectly balanced with ginger, soy and mirin.

Ingredients

  • 100g pork fillet
  • 2 tsp soy sauce
  • 2 tsp mirin
  • 1 tsp light miso paste
  • 1 packet ramen noodles (approx 150g)

Soup

To serve

  • 1 egg, soft boiled, cut in half
  • Spring onion, chopped finely
  • Nori (seaweed) sheets
  • Red chilli, thinly sliced

Method

Step 1.
Combine the pork with the soy sauce, mirin and miso in a bowl and marinate for 30 minutes or up to 4 hours if time permits.

Step 2.
Heat olive oil in a fry pan over medium heat, add the pork fillet, cook on each side for 4-5 minutes, or until cooked through. Remove from pan and let rest before thinly slicing.

Step 3.
Bring a pot of water to the boil, add noodles and cook according to packet directions, drain.

Step 4.
To make the soup, place soy sauce, mirin and ginger in a bowl. Add prepared bone broth to the bowl and mix well. Adjust seasoning to taste.

Step 5.
To serve, add prepared noodles, pork and egg to a bowl, and cover with soup. Add toppings of choice and serve immediately.
