Vegan strawberry smoothie bowl with dried goji berries and grated chocolate

This nutrient dense vegan smoothie bowl is sure to keep you going until lunch! Start your morning right with this blast of flavour and colour.

Ingredients

  • 100g (2/3 cup) fresh strawberries, sliced
  • 50 ml coconut yoghurt
  • 75 ml pure pomegranate juice
  • 1 tsp agave syrup
  • 4 cubes ice
  • 1 tbs goji berries
  • 2 tbs dried apple, snipped into bite-sized pieces
  • 2 tbs dried strawberries
  • 1 tbs vegan dark chocolate, grated
  • 1 tbs puffed quinoa

Method

Step 1.
Put the fresh strawberries, coconut yoghurt, pomegranate juice, agave syrup and ice cubes in a liquidiser. Blend for 1 minute or until smooth, then pour into a bowl.

Step 2.
Decorate the top with the rest of the ingredients and serve straight away.

Serves 1
